- Wash, peel and dice potatoes into 1.5cm pieces. Boil until just cooked and drain.
- In a wide bottomed frying pan sauté onion, garlic and ginger in oil until lightly browned.
- Add potatoes, dried spices, mustard seeds and grated turmeric or powder.
- Continue to fry on a medium heat until you can smell the spices.
- Finish by tossing through the red chilli.
- Fry the halloumi just prior to plating your dish and add to the potato mix.
- Garnish with chutney and fresh coriander.
