Fried Halloumi with Spiced Potato Hash and Mango Salad

  • 700g washed waxy potatoes, 1.5cm dice
  • 200g halloumi, cut into 1cm squares


  • 1 green mango, cut into thin strips
  • ½ red onion, finely sliced
  • ½ cup fresh coriander, roughly chopped
  • 1Tbsp white vinegar
  • 1Tbsp white sugar
  • Salt and pepper to taste

Spiced potato:

  • 1/2 white onion finely diced
  • 1tsp garlic, minced
  • 1tsp ginger, minced
  • 4Tbsp sunflower oil
  • Salt and pepper to taste
  • 1Tbsp black mustard seeds
  • 1tsp curry powder, mild
  • 1tsp cumin powder
  • 1tsp coriander powder
  • 1Tbsp turmeric, fresh grated or ½ tsp of powder
  • ½ red chilli, deseeded & finely chopped

  1. Wash, peel and dice potatoes into 1.5cm pieces. Boil until just cooked and drain.
  2. In a wide bottomed frying pan sauté onion, garlic and ginger in oil until lightly browned.
  3. Add potatoes, dried spices, mustard seeds and grated turmeric or powder.
  4. Continue to fry on a medium heat until you can smell the spices.
  5. Finish by tossing through the red chilli.
  6. Fry the halloumi just prior to plating your dish and add to the potato mix.
  7. Garnish with chutney and fresh coriander.
